Tradition and quality of Andalusian olive oil
Andalusia is one of the largest olive oil producing regions in the world, with more than 1.5 million hectares of olive groves. The olive oils produced here are of high quality and in many cases have a protected designation of origin (DOP – Denominación de Origen Protegida). One of the most important regions is Jaén, often referred to as the ‘olive oil capital’, but the provinces of Córdoba, Seville and Almería also play a significant role in production.

The most commonly grown olive varieties in the region include Picual, Hojiblanca, Arbequina and Verdial, all of which have their own particular flavour characteristics, so Andalusian olive oils range from intensely fruity, slightly peppery flavours to softer, sweeter varieties.

The art of olive oil making
Making olive oil is a precise process that requires great skill and patience. The olives reach their peak oil content in late autumn or early winter, when the harvest begins. The traditional method was to beat the fruit from the trees with sticks, but this damaged the buds, so nowadays the olives are gently picked by mechanical shaking. After picking, the fruit is carefully sorted and washed with cold water to remove any impurities.

In the next step, the olives are crushed to release the oil. This mass is then pressed at a low temperature to preserve the natural flavours and nutrients of the oil. During the extraction process, the pure oil is separated from the pulp and the kernel, which is recovered as a by-product. In traditional pressing plants, the oil is still pressed under pressure, while more modern processes use mechanical filtration.

In the final stage, the oil is settled and purified until it acquires its characteristic golden colour and rich, fruity fragrance.
