Summer Truffle Hunting in Tuscany – An Authentic Mugello Experience

Truffles are among the finest delicacies in Italian cuisine, and Tuscany is one of the best regions in Italy for finding them. While autumn is famous for the prized Tartufo Bianco, other varieties, like the black summer truffle (Tuber aestivum), can be found throughout the year – hiding beneath the forest floor, waiting to be discovered.

These unique fungi grow underground in symbiosis with tree roots, invisible to the eye but unmistakable in aroma and taste. As Rossini once said, they are truly “the Mozart of mushrooms.”

Mugello – Where Nature, Flavor, and Summer Truffles Meet

In northern Tuscany lies the scenic Mugello Valley, where my dear friend Iona runs a beautiful agriturismo called Il Poggio alle Ville. She and her family have become close friends over the years. One sunny afternoon, while our daughters were enjoying a poolside party at the estate, Iona turned to us and asked:

“Would you like to go truffle hunting?”

Of course we would! We had never done it before – and they had just welcomed a new puppy who was in training to become a truffle dog. It was the perfect moment to explore the woods on their land.

Truffle hunting is not only exciting – it’s deeply grounding. You slow down. You breathe with the forest. You follow the dog’s movement and wait for the moment when it starts digging. And then, when that unmistakable earthy scent rises from the soil, it feels like finding buried treasure.

The Mugello region offers ideal conditions for summer truffle growth, thanks to its healthy woodlands, local agricultural traditions, and the efforts of the Tartufai Mugello Association, which helps protect and promote suitable truffle environments. Most truffles are found near the base of oak trees, where trained dogs use their incredible sense of smell to locate them.

Under the Tuscan Soil – and On the Plate: A Summer Truffle Experience

The magic of truffles isn’t only in how rare they are – it’s in how they transform food. Black summer truffles offer an earthy, slightly nutty aroma that pairs beautifully with olive oil, fresh pasta, eggs, or even buttered toast. But one rule always applies: keep it simple.

Truffles shine best when they’re allowed to take center stage. That’s why some of the most memorable dishes are also the most minimalist – like a plate of fresh tagliatelle, a generous drizzle of extra virgin olive oil, and paper-thin shavings of truffle. Nothing more, and yet everything is there.

In every bite, you can taste the forest walk, the excitement of the hunt, the dog’s bark, the early morning stillness, and the moment the truffle is pulled from the earth. That’s what makes the experience unforgettable – not just on the trail, but at the table.
