When I visited the Saliceto farm, where the family has been practicing cheese making in Italy for three generations, it wasn’t just a tour. It was a deep dive into the heart of Italian rural life—where animal care, land knowledge, and respect for age-old traditions are daily realities. Here, Parmesan cheese is not just a product; it’s a living story.

Parmigiano Reggiano is crafted only in the Parma cheese region—covering Parma, Reggio Emilia, Modena, and parts of Bologna—where the sunshine, lush fields, and milk from local cows give every wheel its unique character. It takes 10 liters of fresh milk to make just one kilogram of this traditional Italian cheese, and with a daily production of only about 10 wheels, it’s clear that quality—not quantity—is the true measure.
